First things first – do you eat a smoothie with a spoon or a straw? This was a very heated conversation this weekend out of which I discovered I am 100% #teamspoon and C is 100% #teamstraw. I’m questioning this whole marriage thing…just kidding! I’m an equal opportunity smoothie eater/drinker. But because it’s my blog, this sweet potato pie smoothie BOWL is what you’re getting today! So grab your spoons because this smoothie bowl is packed full of deliciousness including some hidden veggies…and not just the sweet potato!

Here’s What You Need:

  • Sweet potato
  • Zucchini
  • Banana
  • Yogurt
  • Unsweetened vanilla almond milk
  • Pumpkin pie spice
  • Cardamom
  • Fresh ginger

How to Cook a Sweet Potato For This Smoothie Bowl

The first step in making this smoothie bowl is cooking the sweet potato. There are a few ways you can do this:

Steam – Slice the sweet potato in half and then steam in a steamer basket on the stovetop for 10 minutes. 

Bake – Poke the sweet potato with a fork a few times and then wrap it in foil and place in a 350ºF oven for 1 hour.

Microwave – Poke the sweet potato a few times with a fork and place in a microwave safe dish. Microwave for five minutes, flipping halfway through.

How to Make a Smoothie Bowl

If you’ve never made a smoothie bowl, it’s basically just a smoothie that is so thick you can eat it in a bowl! I like mine slightly more thick and creamy (as opposed to thin and runny) because it’s easier to eat with a spoon.

To make this sweet potato smoothie bowl, place all of the ingredients into a high powered blender and blend until smooth. Pour into a bowl and top with additional yogurt, pumpkin spice and toppings of your choice. The key is to not add too much liquid. If you add too much then it will be too runny. In that case you can just put it in a glass and drink with a spoon but if you’re more of a “breakfast soup” kind of person make sure you don’t go overboard on the liquid.

Ingredients

  • 1 small sweet potato
  • 1/2 cup steamed then frozen zucchini*
  • 1 small banana, frozen
  • 1/3 cup yogurt (+ more for topping) or use dairy-free yogurt
  • 1/2 cup unsweetened vanilla almond milk (more for a thinner consistency)
  • 1 tsp pumpkin pie spice
  • 1/4 tsp cardamom
  • fresh ginger (about the size of your fingernail)

To cook the sweet potato:

  1. slice sweet potato in half and then steam in a steamer basket for 10 mins
  2. OR wrap in foil and place in a 350 degree oven for 1 hour.

For smoothie:

  1. Place all ingredients into a blender and blend until smooth.
  2. Top with additional yogurt and pumpkin spice or toppings of choice

*Could use uncooked zucchini as well
